Hill Country beer, Texas wine and espresso now pouring on RR 12, with a ranch-house brewery still to come
The wait is over. After months of "opening soon," the Tasty Room at Beer Ranch Project is pouring in downtown Wimberley, a few steps off the Square. It's the beer-and-wine-and-coffee front porch of a bigger project — a ranch-house brewery still being built a few miles out of town, plus a small boutique inn sharing the same address.
The story. This is a husband-and-wife operation that's been building two things at once: a boutique Inn and an onsite tasting room located in downtown Wimberley on Ranch Road 12, plus a ranch-house brewery a few miles down the road, with the tasty room now open and the brewery expected later this year. The inn came first — three studios and four bungalows tucked behind the tasting room — and now the Tasty Room has caught up, pouring beer, wine, coffee and light bites while the actual brewery finishes construction on the family's five acres outside town. The brewery is set on a five-acre family ranch a few miles from town, and visits there are by appointment only for now.
The vibe. It's a small, low-key tasting room more coffee-shop-meets-taproom than bar — the kind of place where you can grab a latte at 9am or a pint at 8pm without it feeling like two different businesses. It's a cozy Hill Country coffee shop and tasting room in downtown Wimberley serving craft espresso, local beer, and Texas wine, described as a relaxed spot for a morning latte, afternoon pint, or evening glass of wine near the Square, run by a small family-run business focused on good drinks, good people, and genuine Hill Country hospitality. Expect a handful of indoor seats, a patio feel, and the inn's studios and bungalows right behind it if you want to make a night of it.
What to order. The tap list leans local and rotates — think "Beer On Tap" curated for "quality, craftsmanship, and drinkability," featuring Hill Country craft beers from approachable everyday pours to seasonal one-offs. On the wine side, they're pouring Texas wine on tap from producers including William Chris Vineyards and Jaclyn Renee Wines — rosé, crisp whites and bold reds by the glass, flight or bottle. If you're not drinking, the espresso bar is worth the stop on its own: espresso, coffee, chai and matcha made with beans from Seven Weeks Coffee. And if you're headed to the river or just want to take the party home, crowlers filled straight from the tap are available to go.
Good to know. Hours are a little unusual — no weekday morning rush here. The Tasty Room is open Wednesday 3-9pm, Thursday 9am-12pm and 3-9pm, Friday and Saturday 3-10pm, with Sunday and Monday by appointment only. They also take online pickup orders and coffee appointments can be reserved separately. Worth noting: this isn't a full kitchen — it's billed as drinks and light bites, not a dinner destination, so plan accordingly if you're hungry.
