Coffee, scratch bakery and a from-scratch kitchen, open daily down the road from the square

BenCo Provisions has settled into its spot on Ranch Road 12, and it's already doing what it set out to do: give Wimberley somewhere to sit still for a minute. Part coffee counter, part bakery case, part kitchen turning out skillet breakfasts and stacked sandwiches, it's built for lingering rather than rushing through.

The story. The recipe came from a kitchen we grew up in — buttermilk, butter, flour, and a careful hand, and the idea was that if a biscuit could gather a family on a Sunday morning, maybe it could gather a town, too. The place is marked "Wimberley, Texas · Est. 2026" and it's a locally owned coffee shop, bakery, and kitchen in Wimberley, Texas, built on the idea that good food should be simple, filling, and made with intention. It takes its cues from old-world provision stores and American homestead kitchens.

The vibe. This isn't a grab-and-go counter. They found a building on Ranch Road 12, painted the walls the color of cream, and set a long table for whoever wanders in. It sits down the road from the square, and the whole operation runs on a simple line: "My favorite lunch spot in Wimberley! The food is so good, their baked goods are incredible (and the coffee too, of course!) Good vibes in here and always wonderful service."

What to order. The menu splits into breakfast, lunch, bakery and coffee, and there's enough of it to make returning worthwhile. For breakfast, try The BenCo — three eggs any way with bacon, sausage, and roasted potatoes ($14.95) — or the BenCo Benedict, poached eggs over a biscuit or cornbread with shaved ham and green chili queso ($13.95). At lunch, the Hot Pastrami Mike stacks warm pastrami with swiss, pickled onion and black truffle garlic aioli on a house roll ($14.95), and The BenCo Beef Au Jus piles pot roast and provolone on house-made bread with au jus and horseradish sauce on the side ($15.95). Save room for a cinnamon roll ($4.25) or a slice of chocolate pie ($5.75) from the bakery case, and work your way through the coffee list — a latte, cortado or one of the barista specials like the brown-sugar-and-oat-milk Cayden's Latte ($7.50).

Good to know. It's pickup only for online orders, so plan to swing by if you want it fast, or settle into the dining room if you've got time to spare. As they put it: the coffee's on.
