Sommelier Nancy Sallaberry's shop on Ranch Road 12 applied for a wine-and-beer permit at Building 300 off Old Kyle Road
Casa V — the wine shop, patio and art gallery on Ranch Road 12 that a lot of Wimberley still calls Casa Vindemia — has a new address on paper. On September 21, it filed with the state for a wine-and-beer permit at Building 300 in Old Rock Grove, the new development off Old Kyle Road.
The news. Nothing has been announced by the shop, so read this as a forward signal, not a done deal. A permit at a second address usually means one of two things: a move, or a second room. We don't know which yet. The thing that matters for this weekend: the current shop on Ranch Road 12 is open and pouring as usual.
The place. Nancy Sallaberry is a certified sommelier whose family roots run to Parras de la Fuente in Mexico, home of some of the oldest vineyards in the Americas. She was born in Brownsville, spent her childhood in Mexico, flew internationally as a flight attendant, and started taking wine courses while raising her kids in Houston and Los Angeles. After watching Bottle Shock, she decided she wanted to be on the other side of the bar — and came to the Hill Country to do it.
She opened Casa Vindemia in 2016 in a small storefront along Cypress Creek, then moved to 15555 Ranch Road 12, where the wine-and-beer patio had its ribbon cutting in 2019. Since then it has grown from a tasting room into a bit of everything: retail shop, patio, event space, and a gallery hung with work by local artists.
What's pouring. The focus is international wine from small, family-owned producers — Spain, France, Italy and the rest of the Old World — with room for Texas bottles too. If you're not sure what you like, that's the point of the place: Sallaberry runs a wine club with bottles picked to your taste, wine-and-chocolate pairings, wine classes and personal sommelier services. It also hosts private and corporate tastings, weddings and live music.
Good to know. The shop is open Thursday through Sunday only — afternoons, not evenings — so plan accordingly. If you're thinking about a private tasting or an event, ask about the Old Rock Grove plans while you're there; they'll know before we do. We'll report back once there's an opening date or announcement for Building 300.
