Construction on East Ladera Boulevard starts this month, with doors expected open by early summer 2027

CAVA is coming to Bee Cave, and this time there's dirt about to move. The Mediterranean fast-casual chain has been circling a spot on East Ladera Boulevard since early last year, and the city just cleared the path for it to actually get built.

What's coming. CAVA specializes in Mediterranean-style cuisine including bowls, pitas and salads. Think build-your-own bowls and pitas loaded with hummus, grilled meats, Crazy Feta and all the usual Mediterranean fixings — the same fast-casual format you've probably hit at other CAVA locations around Austin.

Where and when. The new location is planned for 13714 East Ladera Blvd., Bee Cave, right near the upcoming Chipotle on the same stretch. Bee Cave City Council just approved special use permit extensions for the construction of Cava and Chipotle on East Ladera Boulevard, pushing the hard deadline out. The original one-year window the city gave developers back in early 2025 turned out to be unrealistic — city documents noted a special use permit expires if a certificate of occupancy is not issued within a year of its approval date, and that this time frame may be rational for an existing building, yet is not a "reasonable" time frame for ground-up construction to take place and a certificate of occupancy to be granted. So developers requested the permits be extended to Sept. 1, 2027.

The good news for anyone counting down the days: although the permits have been extended to September 2027, developers expect the restaurants to be open in May or June 2027 if there are no weather-related delays. And the dirt work itself isn't far off — according to city documents, construction on both sites is expected to begin this month.

Who's behind it. This is a corporate CAVA location, not a local franchise — the same Mediterranean chain with locations across the Austin area and nationwide. No local operator or franchisee name has been attached to the Bee Cave build in city records so far.

What we don't know yet. No official opening date has been set beyond that May-or-June 2027 target, which is itself contingent on weather and a construction timeline that's already slipped once. We don't have a phone number, hours, or a dedicated store page for this address yet — those typically show up on CAVA's site once a location gets closer to opening. Worth noting, too, that this isn't a sure thing until shovels are actually in the ground; the city's own extension exists because the first deadline came and went without construction starting.
