Highland is the hidden, reservation-only, dining experience inside Castlehill, which opened in July near UTSA at 5138 UTSA Blvd. Entrance is through a sliding bookcase wall at the back of Castlehill, making this a fun “speakeasy-style restaurant”.

Graham Campbell is a Scottish chef who earned Michelin-star recognition while leading a restaurant in Scotland. He later appeared on Netflix's show - The Final Table and Food Network's show - Chopped. Highland is his more elevated concept: an intimate chef's-table experience with a multi-course tasting menu, with modern European technique and Scottish influences and plenty of culinary surprises.
It's currently offered as a $120-per-person prepaid experience. The current tasting menu mentioned includes dishes such as seared king scallop, marinated pork cheek, skate wing, and venison.
The San Antonio Express-News recently named Castlehill + Highland an honorable mention in its 2026 Top 50 coverage and described Highland as one of the city's more intriguing new prospects.
