If there's one new table worth the drive this month, it's the one at the top of the Devil's Backbone. The Honeysuckleopened this spring on the ridge that ribbons across the Hill Country — the same stretch of FM 32 that draws motorcyclists, sunset-chasers, and ghost-story lovers from all over the state — and it has quietly become the best excuse we've found to point the car west at golden hour.

The story. The Honeysuckle rises from the site where the old Riley's Tavern once stood, and its name is pure Hill Country lore: it's a nod to the 1980 Willie Nelson film Honeysuckle Rose, parts of which were shot right here on the property. Owners Ryan and Leslie set out to build "a landmark — something iconic," and handed the vision to Wimberley architect Matthew Tilbrook, who wrapped a restaurant and party room below with a wide-open rooftop bar above. The result feels intentional and timeless, a building that belongs to the Backbone rather than sitting on top of it.

The vibe. Downstairs is easy, warm, come-as-you-are Southern comfort. Upstairs is the showstopper: an open-air rooftop bar with heart-stopping, panoramic views of the Backbone and the ranchland rolling out beyond it. Come for the sunset, settle in with a cocktail, and let the evening take its time.

What to order. The kitchen leans into hearty Southern classics done right. Start with the golden fried oyster po'boy, then go big with the smoked ribeye and a skillet of cast-iron mac and cheese. There's gumbo, a proper pork chop, Gulf snapper, and a lineup of wings, tenders, and burgers, plus sides worth fighting over — mashed potatoes, asparagus, green beans. Whatever you order, get something from the rooftop bar to go with the view.

Good to know. They're closed Mondays and Tuesdays, so plan a Wednesday-through-Sunday visit, and note that weekends run late (until 10 p.m. Friday and Saturday). Time it for golden hour and head straight upstairs — the rooftop is the whole point. It's an easy add-on to a day around Wimberley, Fischer, or a spin down the Backbone.
