Same 24-hour dough, now with four walls and a mural next door
FM Pizza spent its first chapter parked in a trailer on the east side of Wimberley, selling slices to people who bought their drinks from the bodega across the lot. That phase is over. The brick & mortar is now open, tucked into the Wimberley Commons strip on RR 12, and the shop that built a following out of a food truck window now has actual seating.
The story. FM Pizza started as a trailer operation and built a loyal following slice by slice before making the jump to a permanent space. One reviewer who'd followed the shop through both chapters noted "they used to be in a food truck on the east side of Wimberley and now they are in a brick & mortar in the middle of Wimberley." The move hasn't changed the thing that made people drive out for it in the first place: fresh dough made in-house with unbleached, unbrominated flour, olive oil, and a 24-hour ferment.
The vibe. This is a by-the-slice counter operation, not a sit-down Italian joint — order at the counter, grab a table or take it to go. The Yelp directory lists outdoor seating and a mural next door, and the listing describes it as casual, family-friendly, with parking and outdoor dining on site, per the visitor directory. It's the kind of place where you show up in flip-flops after the river and leave with sauce on your shirt, and nobody minds.
What to order. All pies are 18 inches, sliced 8 ways, and feed four adults — this is New York-style pizza, full stop. The lineup leans classic with a few twists:
- Regular pie — tomato sauce, mozzarella, oregano
- Spicy boy — tomato sauce, mozzarella, cupping pepperoni, pickled jalapenos, hot honey, oregano
- FM Margherita — fresh mozzarella, aged mozzarella, parm, fresh basil, evoo
- Pink pie — cooked tomato cream grandma sauce, mozzarella, parm
- Half & half — can't decide on a pizza? get half and half of any two specialty pizzas on one pie
Can't settle on toppings? There's also a build-your-own option: a regular pizza base with up to three toppings of your choice, with sauce substitutions running an extra charge. Garlic knots come in orders of four, eight or a dozen with marinara on the side, and there's soft-serve-style ice cream sandwiches for dessert.
Good to know. They're closed Tuesdays — every other day, the ovens are going, though exact hours differ slightly depending on the source, so it's worth a call before a special trip on a slow weeknight. The shop also keeps things free of seed oils, palm oil, soy and GMOs, a detail they post right on their site.
