Open at 6 a.m. seven days a week, roasting its own beans, and built to be the Hill Country's living room
The story. Guernica Cafe opened in 2022 because its founders — veterans who'd settled in the Hill Country — thought the area needed a place to recharge, gather, and treat yourself to something good. What they built inside the Oribellos building on Highway 71 in Spicewood is a modern take on the classic American café: coffee taken seriously, a kitchen that runs all day, and a room that works just as well for a laptop morning as for a table of neighbors who lost track of time. A second Guernica followed in Austin, but the Spicewood original is the one that opens earliest.

The vibe. Neighborhood living room. Free Wi-Fi, kids welcome, families in on weekends, lake-bound folks grabbing a to-go cup at dawn. The doors open at 6 a.m. every day of the week, so it's the early stop on the way to Lake Travis or the wineries — not the late one — and it closes at 2:30 in the afternoon.
What to order. The house lattes are the reason people make the drive: the ube latte (purple, nutty, a little sweet), the horchata latte, and a proper café de olla with cinnamon and piloncillo. If you'd rather taste the beans, they roast a Colombian light, medium, and dark plus a Brazilian-Colombian house blend with notes of nut and chocolate — bags are available to take home. The kitchen does all-day breakfast and fresh sandwiches and salads for lunch, and there are seasonal specials worth asking about. Oat and almond milk are always on hand.
Good to know. Guernica is open 6 a.m.–2:30 p.m., seven days a week. Takeout is easy, and they cater — good to know if you've got a crowd coming to the lake house. It's an easy pairing with a Spicewood winery loop or a Saturday at Poodie's down the road.
