The trailer parked in front of Blanco Brew is slinging burgers now, not brisket

The family behind Hays County BBQ has a new project sitting in the gravel lot at 14200 Ranch Road 12 — right in front of Blanco Brew. It's called Hays County Burgers Y Mas, and it's doing exactly what the name says: burgers, classic sides, and that same smokehouse pedigree in a different format.

The story. This isn't a brand-new truck rolling into town — it's a changing of the guard. The city permit covers a food service trailer in the Blanco Brew parking lot, previously operated as Saucy Bros but now running as Hays Co Burgers Y Mas. The city's director of development services noted the previous operator's permit had expired and they wanted to get a new truck in there, which is how this one landed. The connection to the long-running San Marcos barbecue institution is the draw here — once a three-time Texas Monthly Top 50 Bar-B-Que joint, it's now running as an old-fashioned burger restaurant, with a new look and fresh menu but the same family behind it.

The vibe. This is a trailer, not a dining room — think picnic tables and Blanco Brew's parking lot, with the actual coffee shop right there if you want to turn lunch into an afternoon. The truck is permitted by the Hays County Health Department and set up with restroom access through the shared lot, with the Blanco Brew property owner aware of the arrangement. It's a casual, order-at-the-window kind of stop — good for a quick lunch run or a mid-afternoon burger if you're already out that way on RR 12.

What to order. The exact menu board wasn't available to us at publish time, but the pitch is straightforward: an exciting new permanent food trailer setup right in front of Blanco Brew, serving up incredible, juicy burgers and classic sides with that signature Hays County touch. Expect the classics — cheeseburgers and fries territory — with whatever barbecue-kitchen instincts the family brings over from their smokehouse background. Call ahead if you want specifics before you drive over.

Good to know. Call-in orders are welcome, and they accept both cash and credit cards. Hours are limited and midday-only, so don't plan on this for dinner — it's a lunch window operation, Wednesday through Saturday.
