Why Northwest Austin's best brisket is worth crossing the line for

There's a particular kind of commitment required to eat at InterStellar BBQ: you have to want it enough to set an alarm. Tucked into a nondescript strip center just north of Lakeline, this little smokehouse has spent years quietly building one of the most talked-about barbecue reputations in the state — the kind that pulls people across county lines before sunrise for a tray of brisket and pork belly. If you've been putting off the drive because "it's just barbecue," this is your week to stop putting it off.

The story. InterStellar is the work of pitmaster John Bates, an award-winning chef, pitmaster, and restaurateur dedicated to pushing the boundaries of Modern Texas barbecue. A Corpus Christi native with more than three decades in restaurants, Bates built InterStellar on a straightforward premise: slow down, use good wood, and don't cut corners. The restaurant is built on using only the highest quality ingredients, sourcing the best wood for the barbecue, and cooking one batch at a time rather than rushing or taking shortcuts.

That patience has paid off in a way few backroad barbecue joints ever see. Bates earned a Michelin star in 2024, which the restaurant retained in 2025, along with recognition as one of the top barbecue destinations in Texas by Texas Monthly. It's a credential usually reserved for white-tablecloth dining rooms, not a counter-service spot next to a nail salon — and that contrast is exactly what makes InterStellar's rise such a good story. The accolades changed the lines, not the food: it's still smoked low and slow over post oak, served on butcher paper, same as it ever was.

The vibe. Don't expect polish. The dining room is small, the chairs are a mix of folding and wooden, and the decor leans into the name with playful space-age signage — it's a place that is cozy, with checkered floors and quirky space-themed signage, casual, but the flavor is anything but. Most of the real action happens outside, in the line that starts forming well before the doors open and often forms before they've even opened, with everyone here for a taste of pitmaster John Bates's barbecue, done low and slow over post oak.

Go on a weekday if you can — weekend waits regularly stretch past two hours. There's no host stand and no reservations; you order at the counter, then find a seat yourself, so claim a table only after you've got your tray in hand. Bring a folding chair if the patio's full — regulars do.

What to order. The brisket is the backbone of the menu, but the dish everyone drives in for is the pork belly — the kind of thing that turns first-timers into regulars. Expect a chalkboard of rotating sides and specials alongside the standards.

  • Brisket — beef brisket, the house staple, smoked over post oak until it's fork-tender.
  • Peach Tea Glazed Pork Belly — slowly smoked until tender, then glazed with a homemade peach tea glaze — widely considered the dish that put InterStellar on the map.
  • Jalapeño Popper Sausage — a spicy, cheesy riff on the classic links, made in-house.
  • Pork Spare Ribs — Cheshire pork spare ribs, a little sweet, a little heat, dry rub, no sauce.
  • Smoked Scallop Potatoes — thinly sliced potatoes layered with cream, parmesan and garlic, smoked to a golden brown.

Good to know. No reservations — it's counter service, one line for dine-in and takeout alike, and beans come complimentary on every plate. It's cash-and-card. There's no alcohol for sale, but guests 21 and over are welcome to bring their own — staff reserve the right to check ID. The kitchen sells out of popular cuts most days, often by early-to-mid afternoon, so the earlier you arrive, the better your shot at the full menu — the pork belly in particular tends to go first. Plan for a wait of an hour or more, longer on weekends and holidays.
