Three food-truck pads, picnic tables and a kids' play area going in at the FM 150–FM 3237 corner
Driftwood's busiest crossroads is about to get busier. Pop's Place is the name behind a new inside-outside hangout taking shape next door to Hays City Store, right at the corner of FM 150 and FM 3237 — the same corner that already pulls in Hays City and Waterridge neighbors plus everyone driving the Austin-to-Wimberley stretch on a Friday afternoon.
What's coming. The plan, per the newsletter tip, is a bar built around three permanent food-truck pads rather than a single kitchen — so whatever rotates through handles the food while the house handles everything else: picnic tables, TVs, a dog park, a kids' play area, disc golf and live music. It's shaping up as a stay-a-while spot rather than a quick-bite one, the kind of place where you bring the dog, let the kids run, and pick a truck when you're hungry.
Where and when. Permit records filed with the state show the project at 8801 FM 3237 in Driftwood — the address immediately next to Hays City Store — with the property owned by an entity called 8801 FM 3237 LLC, registered with the Texas Department of Licensing and Regulation in March 2026. The scope of work on file is described simply as "removal of interior walls and build bar," covering roughly 1,800 square feet of the existing building. That filing listed a target completion in mid-May — a date the newsletter's original reporting already flagged as having slipped. As of this writing there's still no firm reopening date.
Who's behind it. Ownership is tied to the LLC on the permit paperwork rather than a named local operator we could confirm; we haven't been able to verify a public-facing name behind the project beyond that filing.
What we don't know yet. No opening date, no confirmed food trucks or rotation schedule, no hours, and no live website or social page we could verify as belonging to this specific project — understandable for a build-out that's still mid-renovation. We also don't have pricing, a cover charge policy for events, or specifics on the disc golf course layout. We'll update this post the moment any of that firms up — including a real website or Instagram, if and when Pop's Place puts one up.
Keep an eye on Pop's Place
