The Nashville-backed concept is moving into the old Le Vacher/Garbo's space on Drifting Wind Run

A steakhouse called Proper Ash is headed for Belterra Village, taking over the address that's cycled through two well-liked restaurants in five years. Le Vacher served French-inspired cuisine for two years before the space was replaced with Austin-based seafood restaurant Garbo's Lobster in 2024. Garbo's closed that Dripping Springs location this past January, almost two years after it opened in April 2024. Now it's steak's turn.

What's coming. Details are thin, but a brand name and an address are confirmed: Proper Ash Steakhouse has its own placeholder website up, describing itself simply as a steakhouse with "a carefully curated wine selection." No menu, chef or opening date has been announced by the restaurant itself yet.

Where and when. The restaurant is taking the 5,173-square-foot space at 136 Drifting Wind Run, Suite 101 — the same unit that housed Le Vacher and, after that, Garbo's. A state filing registered September 17 describes it as a roughly $500,000 interior fit-out covering decor and new kitchen equipment, with no change of use from the prior restaurant tenant. Construction is slated to run from mid-October through June 2027, which puts an opening realistically sometime after that build-out wraps — likely mid-to-late 2027 rather than next month.

Who's behind it. The filing names a Nashville-based ownership group behind the project. Nothing further about the operators, a chef or a restaurant group name has gone public yet. We'll update this post the moment that surfaces.

What we don't know yet. No menu, no pricing, no hours, no social media accounts we could confirm belong to this restaurant, and no firm opening date beyond that construction window. We also don't know yet whether this will be a from-scratch concept or tied to an existing steakhouse brand — the name doesn't match any steakhouse group we could verify as the parent company.
