Sticky buns, a legendary meatloaf sandwich, and a patio next to the kitchen garden — twenty-plus years and still family-owned
Every town needs one place where the morning happens. In Dripping Springs, for more than two decades, that place has been a former plant nursery on Highway 290 with a Belgian accent.
Fabienne Bollom came to Dripping Springs from Brussels, married into Texas, and went looking for the kind of neighborhood café she'd grown up with — the sort of spot where you linger over a pastry and run into half the people you know. When she couldn't find one, she built it. With almost no restaurant experience and plenty of people telling her it wouldn't work, she turned the old nursery into a European-style bakery-café and let the customers shape the menu as she went. The cinnamon rolls started as a request. So did the meatloaf sandwich. Both are now the reason people drive in.
Twenty-plus years on, Rolling in Thyme & Dough is still family-owned and operated, still baking from scratch every morning, and still the place where a good share of Dripping Springs meets for breakfast. There's a kitchen garden out back that feeds the menu, and the patio next to it is where you want to be on any morning the weather cooperates.

What to order: start with the pecan sticky buns or a cinnamon roll — they're the reason the line forms at 8 a.m. The pesto breakfast sandwich and the chicken-sausage breakfast croissant are the savory morning picks. At lunch it's the meatloaf sandwich, full stop; it's the best-seller for a reason. The Belgian waffle is the real thing (the owner would know), and the case by the register is where the carrot cake and Italian cream cake live — take a slice home.
Good to know: they're open Monday through Saturday, 8 a.m. to 3 p.m., and closed Sundays. Breakfast runs until 11, then lunch takes over until close. Saturdays get busy fast — before 9 is the move if you want a sticky bun and an easy parking spot. Indoor and patio seating, and it's an easy walk-up for a coffee and a pastry to go.
