A $1.85 million build-out at 299 W. Mercer St. will be the second Roxie's, after the one that opened in Buda
The family behind The Salt Lick is bringing fried chicken to downtown Dripping Springs. Roxie's is a Southern home-cooking restaurant going into a historic building at 299 W. Mercer St., and it's still on the books for 2026. If you want a preview, the first Roxie's is already open in Buda.

What's coming. It's named for owner Scott Roberts' grandmother Roxanna, "Miss Roxie," and it's built around the Sunday dinners she cooked. Roberts says fried chicken comes first: "We're going to have the best fried chicken around." The plans for Dripping Springs also include chicken-fried steak fried in beef tallow, char-grilled steaks, and mashed potatoes, green beans and creamed corn served family-style and refilled as long as you keep eating. There will be hot rolls and pies made from his grandmother's lard-crust recipe, plus a full bar. At lunch there are plans for individual plates such as smoked turkey and chopped beef sandwiches and a burger based on his father Thurman's recipe. In Buda, diners are also getting deviled eggs, peach habanero wings, biscuits and Salt Lick Cellars wines from the family vineyard in Driftwood.
Where and when. The address is 299 W. Mercer St., in the downtown Mercer Street district. City officials have described it as the old rental facility downtown, and the family has owned the historic-zoned building since 2020. The state accessibility filing for "Roxie's at Dripping Springs" covers a 7,286-square-foot renovation valued at about $1.85 million. That's a serious build-out. The filing's original timeline had construction finishing in fall 2025, which has clearly slipped. The restaurant is still listed as a 2026 opening.
Who's behind it. Scott Roberts is the son of Salt Lick founders Thurman and Hisako Roberts. He and his partners also run The Salt Lick and opened the first Roxie's in the old Buda Mill & Grain Co. building on Main Street in Buda.
What we don't know yet. There's no opening date, no hours and no Dripping Springs phone number yet. We haven't seen a separate Dripping Springs website or social account either. For now, the Buda location's Instagram and its site (roxiesbuda.com) are where the family posts news.
