Ranch-direct beef up front, a wine shop in the middle, a chef's table in back

Most butcher shops hand you a paper-wrapped steak and send you home to cook it. Texas Beef Traders, tucked into Lakeway Town Center, will do that too — or it will seat you at one of 34 chairs four nights a week and cook it for you.

The story. Texas Beef Traders opened in March 2021 as a ranch-direct meat shop and has grown into something you don't see much around the lake. Darin Williams, who spent two decades in the Washington wine industry, runs it now alongside chef Thomas Ward. The beef arrives weekly from two ranches within a hundred miles of here and is butchered in Mason — the kind of short, traceable supply chain the shop is built around.

The vibe. A real butcher case up front, a wine shop in the middle, and a kitchen in back that turns into a 34-seat dinner Thursday through Sunday. It's a small room, so it feels less like a restaurant service and more like being fed by people who know exactly where your steak came from.

What to order. The dinner menu changes weekly, so trust the kitchen — but the mushroom toast, the charcuterie and the house chimichurri are the things regulars talk about. Shopping instead? The case runs from flat iron and ribeye to tomahawks by the pound, Angus and Texas-raised Tajima Wagyu.
