A food trailer slinging double smash patties and wings off RR 12, open since early August

The Iron Grind is the new burger-and-wing trailer parked at FairLane: Cocktails and Coffee on Ranch Road 12, and it's already settled into the kind of easy routine that makes you wonder how Dripping Springs ever ate without it. Order at the window, grab a picnic table, and a double smash burger with waffle fries shows up faster than you'd think for food this dialed in.

The story. Locals Erik and Christin Turcotte are now serving smash burgers, wings and fries in Dripping Springs, with the food truck located at Fairlane Cocktails and Coffee. The trailer opened Aug. 7 at 29035 RR 12. If the Turcotte name sounds familiar, it should — this is the same family behind Turcotte Butchers & Delicatessen, with deli counter by day, smash burgers by night. That butcher-shop pedigree shows in the beef.

The vibe. This isn't a sit-down restaurant — it's a trailer tucked into FairLane's lot, a spot already known around town as a coffee-and-cocktail hangout with plenty of outdoor seating. You order, find a table under the umbrellas, and the trailer handles the rest. Good for a family dinner that doesn't require reservations, or a quick lunch between errands on RR 12.

What to order. The namesake burger is the one to start with — double smash patties, American cheese, grilled onions, pickles, and Iron Sauce, for $16. For something sharper, the Chicago Beef Smash brings double smash patties, provolone cheese, giardiniera aioli, chopped giardiniera, and pickles for $17. The richest option on the board is the Southern Grind, with double smash patties, pimento cheese, bacon, pickles, crispy onions, and comeback sauce for $18. Every burger and sandwich comes with waffle fries. And don't skip the wings — they come 6 for $11, 10 for $17, or 20 for $32, served with ranch or bleu cheese.

Good to know. The trailer runs Sunday 11am–9pm and Monday through Saturday 11am–9pm. They also handle private events — birthday parties, holiday parties, corporate events and wedding festivities are all on the catering menu. Extra sauces run $0.75 a pop if you want to doctor your own plate — Iron Sauce, ranch, giardiniera, aioli, comeback sauce, garlic aioli, chipotle ranch, or BBQ.
